  • 75grams greek yoghurt
  • 2tablespoons creamed horseradish
  • 2tablespoons dill, chopped
  • 2tablespoons capers, chopped
  • 1 pinch salt
  • 1 pinch pepper
  • 150grams mixed greens
  • 1 cup cooked brown rice, ready-made
  • 150grams canned beetroot, cut into quarters
  • 1 bulb fennel, trimmed, thinly sliced
  • 1 apple, cored, julienne
  • 1 cucumber, sliced into ribbons
  • 4 smoked mackerel fillet

Description

A simple yet fresh and filling salad using ingredients you may already have on hand in your pantry.

Method

Step 1 of 3

Combine the Greek yoghurt, creamed horseradish, dill and capers together seasoning with salt and pepper.

Step 2 of 3

Add the mixed greens and brown rice together in a bowl tossing the ingredients with the yoghurt dressing, placing them into a serving bowl.

Step 3 of 3

Garnish the with beetroot, fennel, apple, cucumber ribbons before breaking up the mackerel scattering it on top.
