  • 1 bunch mint, divided
  • 2 medium lemon, juice of 2, zest of 1
  • 5 medium spring onions, sliced
  • 6 medium figs, sliced into quarters
  • 60grams flaked almonds
  • 5tablespoons olive oil

Description

This herby middle eastern bulghur wheat dish makes a fantastic side or light lunch option.

Method

Step 1 of 3

Place the rinsed bulghur wheat in a large bowl and cover with 400ml of boiling water. Cover and set aside for 30 minutes to absorb.

Step 2 of 3

Once cooked, fluff up the bulghur wheat with a fork, add the herbs, lemon zest, spring onions, figs and flaked almonds and mix well.

Step 3 of 3

Pour over the lemon juice and olive oil, toss and serve.
