- 4tablespoons olive oil
- 1 lemon, juice and zest
- 1/2 clove garlic
- 150grams feta, crumbled
- 1/2 bunch mint, fresh, chopped

Description
This grilled zucchini salad is full of spring flavour and is filling enough for a main course with falafel and creamy feta.
Method
Step 1 of 3
Heat the falafels according to pack instructions. Brush the zucchini strips with olive oil on each side. Heat a large griddle pan on the highest heat and cook the zucchini slices in batches for 2-3 minutes on each side, until soft with char marks.
Step 2 of 3
Whisk the rest of the olive oil with lemon juice and garlic. Place the griddled zucchini in a bowl and toss with the dressing. Add the feta, mint and pomegranate seeds.
Step 3 of 3
Divide the salad between 4 plates, top each with falafel and serve.
