  • 100grams feta, crumbled
  • 150grams pomegranate seeds
  • 100grams pistachios, shelled and chopped
  • 3 medium lemons, juiced
  • 1/2 bunch mint
  • 1/2 bunch coriander, fresh, chopped

Description

This herby, sweet and nutty salad is the perfect entree or side dish for a middle eastern feast.

Method

Step 1 of 2

Place the quinoa in a large saucepan on medium heat, pour over a litre of boiling water and cook for 15 minutes until just cooked. Drain, tip into a bowl and set aside to cool.

Step 2 of 2

Add the feta, red onion, sultanas, pomegranate seeds, chopped herbs, pistachios, oil and lemon juice to the bowl with the quinoa, mix well and serve.
