  • 2 cloves garlic, peeled and minced
  • 1tablespoons red wine vinegar
  • 500grams puy lentils, ready cooked
  • 200grams goats cheese, crumbled
  • 200grams rocket
  • 2teaspoons honey

Description

Pear and goats cheese is a classic salad combination, made more filling and nutritious with garlic lentils.

Method

Step 1 of 3

Pre-heat the oven to 170°C, place the pears in a baking tray surrounded by red onion wedges, drizzle with half of the oil and red wine vinegar and toss to coat. Roast for 25 minutes, turning halfway through.

Step 2 of 3

Add the rest of the oil to a pan on medium high heat and cook the garlic for 2 minutes, stir in the lentils and cook until warmed through. Tip the pears, onions and pan juices and cook for 1 minute.

Step 3 of 3

Remove from the heat, stir through the rocket and serve with crumbled goats cheese and a drizzle of honey on top.
