  • 1 large mango, stoned, peeled and diced
  • 1 large avocado, stoned, peeled and diced
  • 2 large spring onions, chopped
  • 4tablespoons lime juice
  • 4tablespoons sweetcorn, drained,
  • 3tablespoons coriander, fresh, chopped
  • 3tablespoons jalapeno peppers, drained, chopped
  • 100grams cherry tomatoes, chopped

Description

This black bean, avocado and mango salad is a colourful fiesta in a bowl, perfect to serve with tortillas on the side.
Instruction tip
Canned black beans and sweetcorn make this salad really quick to whip up.

Method

Step 1 of 2

Place the black beans, mango, avocado, sweetcorn, cherry tomatoes and spring onions in a large bowl and mix.

Step 2 of 2

Pour over the lime juice and add chopped jalapenos and coriander and serve.
