- 1 large mango, stoned, peeled and diced
- 1 large avocado, stoned, peeled and diced
- 2 large spring onions, chopped
- 4tablespoons lime juice
- 4tablespoons sweetcorn, drained,
- 3tablespoons coriander, fresh, chopped
- 3tablespoons jalapeno peppers, drained, chopped
- 100grams cherry tomatoes, chopped
Description
This black bean, avocado and mango salad is a colourful fiesta in a bowl, perfect to serve with tortillas on the side.

Method
Step 1 of 2
Place the black beans, mango, avocado, sweetcorn, cherry tomatoes and spring onions in a large bowl and mix.

Pour over the lime juice and add chopped jalapenos and coriander and serve.
