Description

This slaw-like salad is packed with veggies and is super satisfying with lentils.

Method

Step 1 of 2

Whisk the oil, orange zest and juice, maple syrup, vinegar and Dijon mustard together to make a dressing.

Step 2 of 2

Add the cabbage, onions, carrots, capers, lentils, zucchini and herbs to a large bowl. Pour over the dressing, toss well and serve.
