- 3tablespoons olive oil
- 1tablespoons red wine vinegar
- 250grams broad beans, frozen
- 250grams peas, frozen
- 4tablespoons mint, fresh, chopped
- 3tablespoons parsley, fresh, chopped
- 4 spring onions, sliced
- 250grams halloumi, sliced

Description
This simple rice salad is full of the flavours of spring with sweet peas and broadbeans.
Method
Step 1 of 3
Cook the rice according to pack instructions and pour into a large bowl. Cook the broad beans and peas in a pan of boiling water for 3 minutes and drain well. Tip into the bowl with the rice.
Step 2 of 3
Pour over the olive oil and red wine vinegar and stir in the spring onions, mint and parsley and mix well.
Step 3 of 3
Heat a drizzle of oil in a non-stick pan on medium high heat and sear the halloumi for 2 minutes on each side. Add to the salad and serve.
