- 400grams carrots, peeled and sliced into quarters
- 2tablespoons olive oil
- 1teaspoons ras el hanout
- 1/2teaspoons ground coriander
- 1teaspoons pumpkin seeds
- 1 large lemon, juiced
- 1tablespoons honey
- 80grams mixed lettuce
- 100grams goats cheese, crumbled
- 1/2 bunch coriander, fresh, chopped

Method
Step 1 of 3
Pre-heat the oven to 200°C. Add the carrots to a roasting tin, drizzle with a tablespoon of oil and sprinkle over the spices. Toss well and roast for 20 minutes. Drizzle over the honey and roast for 5 more minutes.
Step 2 of 3
Toss the leaves in a large bowl with lemon juice, the rest of the oil, coriander leaves and pumpkin seeds. Add the carrots and toss to combine.
Step 3 of 3
Serve with goats cheese crumbled on top.
