Description

This antipasto salad is the quickest way to a delicious, no cook Italian entree with jars of artichokes, roasted capsicums and sundried tomatoes.

Method

Step 1 of 2

Whisk the pesto and oil together in a small bowl. Arrange the artichokes, sundried tomatoes, olives, red onions, cherry tomatoes and rocket in separate sections in a large serving bowl.

Step 2 of 2

Place the mozzarella ball in the middle, drizzle with pesto dressing and serve with crusty bread on the side, if desired.
