- 400grams lamb mince
- 1teaspoons oregano
- 2 cloves garlic, peeled and minced
- 1 medium lemon, zest and juice
- 1 medium red onion, peeled and finely sliced
- 1 medium cucumber, chopped
- 100grams black olives, pitted, chopped
- 4 heads little gem lettuce, finely sliced
- 100grams Greek yoghurt
- 75grams feta, crumbled
- 1tablespoons olive oil
Description
Greek inspired lamb meatballs are packed with flavour in this simple salad, perfect for summer evenings.
Method
Step 1 of 4
Place the beef mince, oregano, garlic and lemon zest in a bowl and mix well. Roll into 20 meatballs and set aside.
Step 2 of 4
Place the feta, lemon juice and yoghurt in a blender with a tablespoon or so of water and blend until smooth, adding more water if necessary to get a dressing consistency.
Step 3 of 4
Heat the oil in a large pan on medium high heat and cook the meatballs, stirring often, for 10 minutes or until cooked through.
Step 4 of 4
Toss the red onion, cucumber, olives and lettuce together in a bowl. Divide between 4 plates and top with meatballs and a drizzle of feta dressing.
