Greek Salad With Baked Feta & Pita Crisps

- 1 clove garlic, thinly sliced
- 1 green capsicum, deseeded, sliced
- 1 red chilli, deseeded, finely chopped
- 1 continental cucumber, halved lengthways, deseeded, sliced
- 1/2 red onion, thinly sliced
- 6 roma tomatoes, sliced
- 1/2teaspoons dried oregano
- 1/2teaspoons smoked paprika
- 2tablespoons red wine vinegar
- 300grams Greek feta
- 3 white wraps
- 1/3 cup olive oil
- 8 sprig fresh lemon thyme
- 1/3 cup kalamata olives, drained
Method
Step 1 of 4
Preheat oven to 200°C. Line a baking tray with baking paper.
Step 2 of 4
Brush wraps with some of the oil and sprinkle with paprika. Cut into wedges or roughly tear. Lay onto baking tray. Bake for 10 minutes until crisp and golden.

Pat feta dry with paper towel. Place half the thyme into a small ovenproof dish, top with feta, remaining thyme, chilli, if using, and garlic. Drizzle with 1 tbs of oil. Cover with foil and bake for 10 minutes.

Meanwhile, toss the rest of the oil with the remaining ingredients for the salad together in a bowl. Preheat the grill. Remove foil from feta and grill for a few minutes until golden. Serve feta with salad and pita crisps.
