For the dressing
  • 2 medium avocado, peeled and diced
  • 3tablespoons red wine vinegar
For the salad
  • 3 large little gem lettuce
  • 1 large red onion, peeled and diced
  • 100grams cherry tomatoes, halved
For the tempeh bacon
  • 250grams tempeh, thinly sliced
  • 3tablespoons olive oil, divided
  • 1tablespoons tamari
  • 1tablespoons smoked paprika
  • 1 1/2tablespoons maple syrup

Description

Smokey tempeh replaces bacon in this satisfying cobb style salad.
Instruction tip
Keep any remaining tempeh marinade to make another batch of tempeh bacon.

Method

Step 1 of 5

In a shallow dish, whisk together half the olive oil, tamari, smoked paprika and a tablespoon of maple syrup. Add the tempeh slices and leave to marinate for 10 minutes, turning halfway through.

For the dressing, whisk the remaining olive oil and maple syrup together with the red wine vinegar.

Remove the tempeh from the marinade and cook for 2 minutes on each side in a non stick pan on a medium high heat.

Add the lettuce, red onion, avocado and cherry tomatoes to a large bowl, pour over the dressing and mix well.

Step 5 of 5

Divide the salad between four bowls, top with slices of tempeh bacon and serve.
