- 125grams frozen broad beans
- 400grams tuna in olive oil, drained
- 10 cherry tomatoes, halved
- 1 handful fresh flat-leaf parsley, finely chopped
- 1 bunch fresh chives, finely chopped
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 12 black olives, pitted
- 12 salted anchovies
- 1 crisp lettuce, leaves separated
- 2 spring onions, finely sliced
- 6tablespoons extra virgin olive oil
- 2tablespoons white wine vinegar
- 2 cloves garlic, grated or finely chopped
- 1tablespoons Dijon mustard

Soak the broad beans in hot water for 5 minutes, then drain.
Step 2 of 4
To make the dressing, put all the dressing ingredients in a screw-top jar, season well with salt and black pepper, cover with the lid, and shake to combine.

Put the tuna and tomatoes in a bowl, and drizzle over half of the dressing. Sprinkle in half of the fresh herbs, and season generously with salt and black pepper. Toss together. Now add the drained broad beans, olives, and anchovies, and mix gently.
Step 4 of 4
Line a shallow serving bowl with the lettuce leaves, and arrange the tuna mixture on top. Drizzle with the remaining dressing, and sprinkle over the remaining herbs. Top with the spring onion, and serve.
