- 60grams baby spinach leaves
- 1 celery stalk, thinly sliced
- 1 avocado, halved, deseeded, chopped
- 1/4 small red cabbage, finely shredded
- 200grams leftover roast turkey, shredded
- 1/4 cup walnuts, chopped, toasted
- 2tablespoons continental parsley leaves, chopped (to serve)

Description
The best creamy, crunchy waldorf salad recipe. We've added turkey and avocado to take this classic salad of apple, celery and walnuts from a side to a main event.
Method
Step 1 of 2
Place cranberries, onion and orange juice in a bowl. Stand for 5 minutes to allow cranberries to soften. Strain over a small bowl to reserve juice. Add mayonnaise to juice and stir to combine. Season.
Step 2 of 2
Arrange spinach, celery, avocado, cabbage and turkey on a platter. Drizzle with orange mayonnaise. Serve topped with cranberry mixture, walnuts and parsley.
