Feta & Pea Salad With Watercress Mayonnaise

- 1 handful fresh watercress, roughly chopped
- 3-4tablespoons good-quality mayonnaise
- 1teaspoons creamed horseradish
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 175grams feta cheese, cubed
- 125grams fresh peas
- 2 handfuls baby spinach leaves
- 1 handful fresh mint leaves
- 1 lemon, cut into wedges (to serve)
Method
Step 1 of 2
Using a food processor, whiz the watercress, mayonnaise, and horseradish sauce until well combined. Taste, and season with salt and black pepper.
Step 2 of 2
Put the feta, peas, spinach, and mint leaves in a bowl, and gently mix through. Season with a little black pepper if you wish. Transfer to a serving bowl, and serve with the mayonnaise and lemon wedges on the side.
