  • 1 large ripe avocado, peeled, pitted, and chopped
  • 125grams baby spinach leaves
  • 25grams alfalfa sprouts
  • 2tablespoons mint, chopped
  • 1 lime, juice only
  • 2teaspoons sesame oil
  • 1 fresh ginger root, 2 cm, peeled and grated
  • 1 pinch salt
  • 1 pinch black pepper

Method

Step 1 of 4

Toast the sesame and chia seeds in a dry saucepan over medium heat, shaking the pan a couple of times, for 30 seconds, until golden. Remove from the pan and let cool.

Step 2 of 4

Blanch the broccoli with the peas in a large saucepan of boiling water for 2 minutes, until the broccoli is just tender but still firm. Drain, rinse under cold water, and drain again.

Step 3 of 4

Put the broccoli and peas into a large salad bowl. Add the avocado, spinach leaves, alfalfa, mint, and toasted seeds.

Step 4 of 4

Whisk the lime juice, oil, and ginger together in a small bowl and season with salt and black pepper. Pour the dressing over the salad and toss well to mix.
