Lentil & Goat's Cheese Salad

Dressing
- 2tablespoons balsamic vinegar
- 3tablespoons walnut oil
- 1teaspoons Dijon mustard
- 1 pinch salt
- 125grams baby spinach
- 400grams can Puy lentils in water, drained and rinsed
- 125grams roasted capsicum, drained and chopped
- 50grams walnut pieces
- 125grams fresh goat's cheese, roughly crumbled
- 1 pinch pepper
Method
Step 1 of 2
Place the spinach, lentils, peppers and walnut pieces in a bowl and mix gently.
Step 2 of 2
Whisk together the dressing ingredients in a small bowl and season to taste. Pour over the lentil mixture and toss lightly to combine. Divide between 4 bowls and top with the cheese.
