  • 1 cucumber, sliced into long, thin ribbons
  • 20 Greek-style pitted black olives
  • 2tablespoons parsley, chopped
  • 2tablespoons mint, chopped
  • 1 green capsicum, cored, deseeded and diced
  • 8 radishes, sliced into thin batons
  • 2 spring onions, thinly sliced
  • 4tablespoons olive oil
  • 2tablespoons lemon juice
  • 8 thick slices country-style bread
  • 250grams haloumi cheese, sliced
  • 1tablespoons lemon rind, finely grated
  • 1 pinch pepper

Method

Step 1 of 3

Combine the cucumber, olives, herbs, green capscium, radishes and spring onions (if used) with 3 tablespoons of the oil and the lemon juice. Season with pepper and set aside.

Step 2 of 3

Heat a frying pan or griddle pan to medium-hot and toast the bread for 1-2 minutes on each side until golden and slightly charred. Toss the cheese in the remaining oil and lemon rind and season with pepper, add to the pan and cook for 3-4 minutes, turning once, until golden.

Step 3 of 3

Put a cheese slice on top of each piece of toast and serve with the salad.
