- 180grams Lemnos Cyprus Style Haloumi
- 4 slice Lawson’s Settlers Grain Bread
- 1 avocado
- 2tablespoons beetroot hommus
- 4 eggs
- 1 lemon
- 1 handful small alfalfa sprouts
- 1/4teaspoons salt
- 1/4teaspoons pepper
- 2teaspoons vinegar, for poaching eggs
- 2teaspoons dukkah, for sprinkling on the eggs
Method
Step 1 of 7
Bring a large pot of water to the boil and add a splash of vinegar.
Step 2 of 7
Scoop the ripe flesh of the avocado into a mixing bowl and smash with the back of a fork. Season the smashed avocado to your taste with salt and pepper and flavour to your taste with lemon juice.

Pop the bread into a toaster and toast until nicely browned.

Whilst you are toasting your bread, poach eggs in the water that was previously brought to the boil.

Rinse haloumi under water to remove excess brine and pat dry. Cut desired quantity of haloumi into 1cm strips and cook in the fry pan for 1-2 minutes on each side or until golden on both sides.

Spread the beetroot hommus onto the plate.

Once everything is cooked to your liking, spread a generous amount of smashed avocado onto the toast and top with the eggs. Add the haloumi and alfafa sprouts to the side and sprinkle the dukkah on top of your eggs, if desired.
