  • 250grams halloumi cheese

Method

Step 1 of 4

Preheat oven to 200 degrees. Skin and cut up the pumpkin into 2cm x 2cm cubes. In a large bowl, drizzle with olive oil and honey, and toss to coat. Season with salt and pepper. Line a baking tray with baking paper and place pumpkin in a single layer. Cook for 30min in the oven, turning once half way through.

Step 2 of 4

In a small bowl, mix lemon juice, olive oil, mustard and honey and mix thoroughly until combined. Season with salt and pepper.

Step 3 of 4

Heat a bit of olive oil on a frying pan on medium heat. Cut up halloumi cheese into stripes and fry until golden, on both sides. Remove from pan and allow to cool. Cut into smaller pieces once cold.

Step 4 of 4

Divide spinach leaves, pumpkin and halloumi between 4 bowls, pour dressing on top and serve!
