  • 50grams green olives, sliced
  • 200grams cherry tomatoes, quartered
  • 200grams rocket
  • 2tablespoons olive oil
  • 2tablespoons balsamic vinegar

Description

This chunky salad recipe has a sweet and also bitter flavour.

Method

Step 1 of 4

Pan fry the drained artichokes with the cherry tomatoes in a pan on a medium heat with the olive oil.

Step 2 of 4

Add the olives and fry for another 2 minutes while tossing.

Step 3 of 4

Drizzle over the balsamic and then remove from the heat and set to one side.

Step 4 of 4

Plate up the rocket and then add the warm ingredients on top to serve.
