  • 1/3 cup crunchy peanut butter
  • 1 lime, juice only
  • 165milliliter coconut milk
  • 1/2 cup water
  • 2tablespoons red curry paste
  • 1tablespoons kecap manis

  • 1/2 iceberg lettuce, cut into wedges
  • 3 eggs, hard boiled, peeled, quartered
  • 5 cooked baby white potatoes, quartered
  • 2 carrots, peeled, shredded
  • 4 baby cucumbers, roughly chopped
  • 150grams green beans, trimmed, blanched
  • 1/2teaspoons red chilli, finely chopped, to serve (optional)

Description

A typical Indonesian dish, this speedy and easy meal is on the table in under 30 minutes and is packed full of flavour and crunch.  

Instruction tip

Kecap Manis is an Indonesian sweet soy sauce. Replace with 2 tsp soy sauce and 2 tsp honey if you prefer.

Method

Step 1 of 2

To make the peanut dressing, combine peanut butter, lime juice, coconut milk, water, curry paste, kecap manis and garlic in a saucepan. Whisk together until well combined. Simmer for 5 mins or until thickened slightly. Set aside to cool.

Step 2 of 2

Divide lettuce wedges between serving bowls. Arrange eggs, potatoes, carrot, cucumber and beans around lettuce. Drizzle with a little dressing and top with chilli and peanuts, if using. Serve extra dressing on the side.
Instruction tip

Try adding pan fried tempeh or firm tofu cubes for extra protein.
