For the dressing
  • 6tablespoons lime juice
  • 2tablespoons reduced sodium soy sauce
  • 4teaspoons maple syrup
  • 1/2teaspoons fish sauce
  • 1tablespoons sesame oil
  • 1 small red onion, peeled and sliced
  • 400grams sirloin steak, lean
  • 1 medium mango, peeled, cored and sliced thinly
  • 300grams mixed lettuce
  • 100grams cashew nuts
  • 1 bunch coriander, fresh, chopped

Description

This quick, sweet and salty salad makes a perfect lunch or light dinner.
Instruction tip
Add rice noodles for a more substantial salad.

Method

Step 1 of 5

Mix all the ingredients for the dressing in a small bowl. Pour half the dressing into a Ziplock bag, add the steaks and leave to marinate for 15 minutes.

Step 2 of 5

Add the sliced red onions to the remaining dressing and leave to steep. In a pan on a medium heat, toast the cashew nuts for 2-3 minutes until lightly golden, remove from the pan and set aside.

Step 3 of 5

Increase the heat to high and fry the steaks for 2-3 minutes on each side depending on thickness, remove from the pan and wrap in foil. Rest for 5 minutes.

Place the lettuce, mango and cashews in a bowl, pour over the red onions and dressing and toss well.

Step 5 of 5

Divide the salad between four plates, top each with sliced steak and chopped coriander and serve.
