  • 2 heads little gem lettuce, shredded
  • 400grams king prawns, cooked, peeled, deveined
  • 1 large papaya, peeled, deseeded, sliced
  • 300grams beansprouts
  • 2 medium carrots, peeled into ribbons
  • 1 bunch coriander, fresh, chopped
  • 1 bunch mint, fresh, chopped
  • 2 limes, juice and zest
  • 3tablespoons toasted sesame oil
  • 1 red chilli, finely diced

Description

This colourful and nutritious prawn and papaya salad tastes like sunshine in a bowl.
Instruction tip
Add chopped cashews or peanuts on top for crunch.

Method

Step 1 of 2

Add the lettuce, prawns, beansprouts, carrots, coriander and mint to a large bowl.

Step 2 of 2

Pour over the lime juice and zest of 1 lime, toasted sesame oil and add diced chilli to taste. Toss well and serve.
