  • 2 anchovies, drained
  • 2teaspoons chives, fresh, chopped
  • 1teaspoons Dijon mustard
  • 1 clove garlic, peeled and minced
  • 2tablespoons olive oil
  • 1 medium lemon, juiced
  • 300grams kale, destalked and chopped
  • 50grams parmesan, grated
  • 50grams pumpkin seeds

Description

This kale salad with anchovy dressing packs a serious flavour punch and is great as an entree or side dish.

Method

Step 1 of 3

Blitz the anchovies, mustard, half of the lemon juice, garlic, chives, olive oil and artichoke oil together in a blender until smooth.

Step 2 of 3

Place the kale in a large bowl and massage the leaves with the rest of the lemon juice.

Step 3 of 3

Tip the artichokes into the bowl, pour over the dressing and toss well to coat. Sprinkle grated parmesan and pumpkin seeds on top and serve.
