  • 150grams broccoli, chopped
  • 150grams asparagus, chopped
  • 100grams green beans, chopped
  • 75grams spinach
  • 190grams pesto
  • 1tablespoons garlic cloves, crushed
  • 2tablespoons lemon juice
  • 1/2 medium capsicum, diced, deseeded

Description

This greens & giant couscous salad is packed with veggies and dressed with herby pesto.
Instruction tip
Add freshly grated parmesan and toasted pine nuts if you want to make this salad into a more substantial meal.

Method

Step 1 of 3

Bring 500ml of water to the boil in a large pot and cook the couscous for 10 minutes, until the liquid has been absorbed. Set aside to cool in a large bowl.

Step 2 of 3

Place the broccoli, asparagus, sugarsnaps, spinach and garlic in a large saucepan over a medium high heat, add a tablespoon of pesto and sauté for 5 minutes, until tender.

Step 3 of 3

Pour the remaining pesto and green vegetable mix over the cooked couscous, add lemon juice and black pepper and mix well to combine before serving.
