For the dressing
  • 2tablespoons olive oil
  • 1 large lemon, juice and zest
  • 1tablespoons harissa paste
For the salad
  • 2 large zucchini
  • 1tablespoons thyme, dried
  • 500grams mixed grains
  • 2 large spring onions, chopped
  • 150grams peas, frozen
  • 3tablespoons mint, fresh, chopped
  • 1 pinch cracked black pepper

Description

A simple but delicious warm salad with plenty of herby green goodness and a bit of spice.

Method

Step 1 of 6

Slice the zucchini in thin strips using a vegetable peeler, brush with a little olive oil and sprinkle over thyme and half the lemon zest.

Step 2 of 6

Place a large griddle pan over on medium high heat and grill the zucchini slices for a minute on each side, cooking in batches.

Step 3 of 6

Whisk the olive oil, lemon juice and remaining zest with the harissa paste in a small bowl.

Step 4 of 6

Cook the mixed grain packs in the microwave according to pack instructions and pour into a large bowl, mix with a fork and pour over the dressing.

Step 5 of 6

Bring a pan of salted water to the boil and cook the peas for 3 minutes and drain, and add to the grain mix with the zucchini, spring onions, fresh mint and cracked black pepper.

Step 6 of 6

Add the peas, zucchini, spring onions, fresh mint and cracked black pepper to the grains, mix well and serve.
