Asian Style Green Bean Salad

- 250grams green beans
- 1 bag Woolworths sprouts bean shoots
- 1 red onion
- 2-3 red chilli (optional)
- 3 clove garlic
- 3 kaffir lime leaves
- 1teaspoons turmeric
- 1/2teaspoons salt
- 2tablespoons coconut oil
- 1/4 cup coconut, shredded or grated
- sprinkle sesame seeds
- sprinkle shallots, deep fried
Description
Delicious warm salad that can be eaten by itself or as a side dish to other Asian dishes.
Instruction tip
You can also squeeze some lemon juice or lime juice to the salad before serving.
Method
Step 1 of 9
Blanch the green beans for a few minutes in a saucepan containing boiling water then plunge into cold water to stop the cooking process. You want the green beans to be slightly cooked but still have a fresh and crisp texture. Remove the ends of the green beans and cut into small segments (about 1-2 cm in length).

Wash the bean sprouts and drain well.

Finely dice a red onion, the red chillies, the garlic cloves, and the Kaffir lime leaves. Make sure that you remove the spine of the Kaffir lime leaves before dicing as it is tough.

Heat up some coconut oil in a frying pan then add the diced red onions from Step 3. Cook the onions until translucent. Then add the remaining ingredients from Step 3 and stir for a few minutes. Also add in turmeric and salt and stir.

Add shredded / grated coconuts to the frying pan and stir for a few minutes until well combined.

Toss in the green beans and stir to warm through.

Toss in the bean sprouts and mix through quickly until just starting to wilt.

Transfer to a serving bowl or plate immediately.

Top with sesame seeds and deep fried shallots and serve.
