Apple Feta Salad Leaves with Toasted Walnuts

- 3 cup mixed leaves (spinach, cos lettuce, kale)
- 1/2 cup toasted walnuts, lightly chopped
- 50grams greek feta
- 1 lemon, juiced
- 1 medium granny smith apple, peeled, cored, thinly sliced
- 1/4 cup extra virgin olive oil
- 1tablespoons apple cider vinegar
- 1tablespoons maple syrup
- 1/2teaspoons wholegrain mustard
- 1 pinch salt (to taste)
- 1 pinch pepper
Description
A delicious, refreshing, crunchy Salad to enjoy during the Summer months.

A delicious combination of apple, feta and walnuts. Fabulous as a main meal or as a side salad.
Method
Step 1 of 4
Gather all ingredients together.
Step 2 of 4
Into a medium bowl add lemon juice, sliced apple and enough water to cover the apples, mix well, set aside. This will prevent the apples browning. Into a small dry non stick frypan, toast the walnuts. Stay with them as they can burn quickly. Set aside to cool.
Step 3 of 4
To make dressing: Into a small screw top jar with a lid, combine oil, apple cider vinegar, maple syrup, wholegrain mustard and salt & pepper to taste. Seal jar and shake vigorously until combined.
Step 4 of 4
To assemble salad: Into a medium serving salad bowl, add the mixed leaves, drained apple slices, toss to combine. Scatter crumbled feta and walnuts over the top. Lastly pour over the dressing and enjoy!
