  • 1/3 cup extra virgin olive oil
  • 1 clove garlic, crushed
  • 1tablespoons wholegrain mustard
  • 2tablespoons plain flour
  • 1 free-range egg, lightly beaten
  • 1 1/3 cups fresh breadcrumbs
  • 1/2 cup flaked almonds, finely chopped
  • 180grams Lemnos haloumi cheese, cut into 5mm-thick slices
  • 125grams baby rocket salad
  • 1/2 bunch continental parsley, leaves picked

Description

This easy salad recipe pairs crunchy halloumi with fresh peppery rocket and zesty orange making for the perfect flavour and texture sensation.

Method

Step 1 of 5

Juice one orange. Peel, halve and thinly slice remaining oranges.

Step 2 of 5

Place orange juice, half the oil, garlic and mustard in a screw-top jar. Season, then secure lid and shake until well combined.

Step 3 of 5

Place flour on a plate. Pour egg into a shallow bowl. Combine breadcrumbs and almonds on a second plate. Dip 1 haloumi piece in flour, then egg and then breadcrumb mixture, turning to coat. Place on a third plate. Repeat with remaining haloumi, flour, egg and breadcrumb mixture.

Step 4 of 5

Heat remaining oil in a large frying pan over medium-high heat. Cook haloumi, in 2 batches, for 1 minute on each side or until golden. Transfer to a paper towel-lined plate to drain.

Step 5 of 5

Arrange rocket, parsley and orange slices on a platter. Top with haloumi, drizzle with dressing and serve.
