- 3 medium firm under-ripe Packham pears
- 1 avocado (thinly sliced)
- 1/3 cup marinated goat's cheese (plus 2 tbs reserved oil)
- 2teaspoons honey
- 1tablespoons white wine vinegar
- 2teaspoons Dijon mustard
- 60grams baby rocket salad
- 500grams chicken tenderloins
- 1/4 cup smoked almonds (chopped)

Method
Step 1 of 4
Heat a chargrill pan over medium-high heat. Place chicken in a shallow bowl. Drizzle over 1 tbs oil from cheese and season. Cook for 2-3 minutes on each side or until golden brown and cooked through. Cut in half.

Meanwhile, trim both ends of pears to make a flat surface. Use a vegetable spiraliser to cut into long, thin noodles.

Combine pear, rocket, avocado, chicken and cheese in a salad bowl.
Step 4 of 4
In a small bowl, whisk vinegar, mustard, honey and remaining oil together. Season, drizzle over salad, scatter over almonds and serve.
