  • 1teaspoons ginger, grated
  • 1 red onion, thinly sliced
  • 2 peaches
  • 2teaspoons honey
  • 2tablespoons balsamic vinegar
  • 1/4 cup pecans, toasted
  • 1 pinch pepper (for seasoning)
  • 1 bunch rocket
  • 1tablespoons olive oil
  • 1/3 cup olive oil (extra)
  • 4 free range chicken breast fillets
  • 1 pinch sea salt ground (to taste)

Method

Step 1 of 3

Heat chargrill pan on medium-high. Brush chicken with oil and season. Halve fruit, remove stone and cut into wedges.

Step 2 of 3

Cook chicken on chargrill for about 5-6 minutes each side until cooked through. Transfer to a warm plate. Add peach wedges to pan and cook for about 1 minute each side until lightly charred. Transfer to a plate.

Step 3 of 3

Whisk oil, balsamic vinegar, honey and ginger together in a bowl. Slice chicken breasts. Arrange rocket, onion, peach, pecans and chicken on plates. Drizzle dressing over. Serve.
