  • 200grams salmon, smoked, thinly sliced
  • 1 red onion, thinly sliced
  • 500grams beetroot, cooked, cut into wedges
  • 2tablespoons red wine vinegar
  • 160grams rocket salad mix
  • 1tablespoons olive oil
  • 400grams no added salt cannellini beans, rinsed, drained
  • 1/2 cup sweet chilli flavoured cashews, coarsely chopped
  • 1/3 cup feta & dill Greek yoghurt dressing

Method

Step 1 of 2

Combine onion and vinegar in a large bowl. Stand for 10 minutes. Season with pepper.

Step 2 of 2

Add oil, salad mix, beetroot, beans and cashews to onion mixture. Toss to combine. Serve salad topped with salmon and drizzled with dressing.
