- 1tablespoons olive oil
- 2tablespoons lemon juice
- 2tablespoons all-purpose seasoning
- 4 chicken thigh fillets
Green Goddess Dressing
- 1/2 avocado
- 1 spring onion (chopped)
- 1tablespoons white wine vinegar
- 1tablespoons olive oil
- 2tablespoons mayonnaise
Salad
- 1/2 avocado (sliced)
- 2 zucchini (spiralised)
- 120grams baby rocket
- 40grams pitted green olives (sliced)
- 6 slices prosciutto (grilled)

Method
Step 1 of 4
To make the chicken, combine pepper seasoning, lemon juice and oil in a bowl. Add chicken and turn to coat.
Step 2 of 4
Cook chicken in a preheated chargrill pan or barbecue over medium-high heat for 4 minutes on each side or until cooked through. Slice.
Step 3 of 4
To make the green goddess dressing, process all the ingredients in a small food processor until smooth.
Step 4 of 4
Spread a little dressing onto plates. Top with rocket, zucchini, avocado, prosciutto, olives and chicken. Season with pepper. Serve.
