- 2 cloves garlic, crushed
- 2 ripe tomatoes, sliced
- 1 green capsicum, seeded, sliced
- 1 small continental cucumber, halved lengthwise, diagonally sliced
- 1/2 bunch mint, torn
- 1 bunch flat-leaf parsley, leaves picked
- 4 spring onions, diagonally sliced
- 2 wholemeal Lebanese bread rounds
- 2 chicken breast fillets
- 1tablespoons sumac
- 1/3 cup olive oil
- 1/3 cup lemon juice
- 1 gem lettuce, leaves separated

Method
Step 1 of 4
Preheat oven to 200°C. Whisk sumac, oil, juice and garlic together and season with salt and pepper.
Step 2 of 4
Brush both sides of the bread with a little of the dressing and place on a large baking paper lined oven tray. Bake for 10 minutes or until golden and crisp. Cool.
Step 3 of 4
Brush chicken with a little of the remaining dressing. Heat a barbecue or chargrill over medium-high heat and cook chicken for 3-4 minutes each side or until cooked through. Remove from heat and rest. Slice.
Step 4 of 4
Top bread with remaining ingredients, chicken and remaining dressing. Serve.
