- 2tablespoons parsley, chopped
- 8 zucchini, sliced
- 2 chicken breast fillets
- 1tablespoons parmesan, shaved
- 1teaspoons pepper (for seasoning)
- 1/4 cup olive oil
- 2tablespoons basil, chopped
- 2 cloves garlic, crushed
- 1 pinch pink salt ground (to taste)

Method
Step 1 of 4
Preheat a BBQ or chargrill over medium-high heat.
Step 2 of 4
Combine olive oil and crushed garlic cloves in a bowl and season with salt and pepper.
Step 3 of 4
Slice chicken breast fillets and place into a separate bowl. Add 1 tbs of the garlic oil. Slice zucchini into long thin slices and add to bowl with remaining garlic oil. Cook chicken for 2 minutes each side or until cooked through. Cook zucchini, on one side only for 2 minutes.
Step 4 of 4
Combine on a serving plate with 2 chopped parsley and chopped basil. Season with salt and pepper. Top with shaved parmesan and serve.
