Dressing
- 4teaspoons harissa paste
- 2 limes, juice and finely grated rind
- 8tablespoons sunflower oil
- 1 pinch salt
- 150grams quinoa, rinsed
- 1 small yellow capsicum, cored, deseeded and diced
- 1 small red capsicum, cored, deseeded and diced
- 4 spring onions, sliced
- 1/3 cucumber, deseeded and diced
- 1/2 fennel bulb, finely diced
- 2tablespoons curly parsley, finely chopped
- 2tablespoons mint, finely chopped
- 2tablespoons coriander, finely chopped
- 2tablespoons sunflower seeds
- 2 limes, juice and finely grated rind
- 8 physalis, quartered
- 1 pinch pepper
Method
Step 1 of 4
Put the quinoa in a pan of cold water, bring to the boil and cook for 15-20 minutes or until the quinoa is translucent and just cooked. Drain and rinse thoroughly in cold water.
Step 2 of 4
Meanwhile, make the dressing by mixing together the harissa paste, lime juice and rind and oil. Season to taste and set aside.
Step 3 of 4
Mix the cooked quinoa with the prepared vegetables and herbs, 1 tablespoon of the sunflower seeds and the lime juice and rind.
Step 4 of 4
Scatter over the physalis and the remaining sunflower seeds and serve with the dressing.
