- 225grams couscous
- 1 1/4 cup vegetable stock, hot
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 2teaspoons harissa paste
- 1 handful raisins
- 50grams walnuts, halved
- 4 preserved lemons
Method
Step 1 of 2
Tip the couscous into a bowl, pour over the stock, and leave to stand for 10 minutes. Stir with a fork to fluff up the grains.
Step 2 of 2
Season well with salt and black pepper, then stir through the harissa, raisins, and walnuts. Halve the preserved lemons, scoop out and discard the flesh, and chop the remainder. Stir into the couscous.
