  • 400grams quinoa, ready cooked
  • 300grams king prawns, cooked, peeled, deveined
  • 1 large avocado, sliced
  • 1 medium cucumber, peeled into ribbons
  • 100grams mixed lettuce
  • 4 spring onions, sliced
  • 2 large limes, juice and zest
  • 1/2 bunch coriander, fresh, chopped
  • 1tablespoons canola oil
  • 1 green chilli, diced
  • 2tablespoons soy sauce, reduced salt

Description

This simple prawn salad is a satisfying meal in a bowl with filling quinoa and avocado.

Method

Step 1 of 2

Cook the quinoa according to pack instructions and pour into a large salad bowl. Fluff with a fork. Whisk the lime juice and zest, half of the coriander, canola oil, soy sauce and chilli together in a small bowl.

Step 2 of 2

Tip the prawns, cucumber ribbons, avocado, spring onions and lettuce into the quinoa bowl and pour over the dressing. Stir well to coat everything with dressing and serve with chopped coriander on top.
