Indian-spiced Paneer with Pickled Cucumber

- 1/2 small red onion
- 1tablespoons Woolworths white wine vinegar
- 1/2teaspoons caster sugar
- 1tablespoons extra virgin olive oil
- 1 Lebanese cucumber, peeled into ribbons
- 400grams paneer
- 2tablespoons rogan josh curry paste
- 5milliliter extra virgin olive oil cooking spray
- 1/4 bunch coriander, leaves picked
- 12 bamboo cocktail skewers
Description
Forkfuls of squeaky paneer are spiced with Indian flavours and served with pickled cucumber and onion for the perfect, easy-to-eat bite.
Method
Step 1 of 3
Place onion in a small bowl. Cover with boiling water. Stand for 2 minutes. Drain and return to bowl. Add vinegar, sugar and oil. Season. Stir until sugar dissolves. Add cucumber and toss to combine. Set aside.
Step 2 of 3
Cut each block of paneer into 6 cubes. Place curry paste in a bowl. Add paneer and toss to coat. Preheat air fryer to 180°C for 2 minutes. Arrange half of the paneer, in a single layer, in the air-fryer basket. Spray with oil. Cook for 6 minutes or until golden. Repeat with remaining paneer.
Step 3 of 3
Place paneer on a serving platter. Drain pickled mixture and arrange a little on top of each piece of paneer, securing with a cocktail skewer or fork. Sprinkle with coriander. Serve immediately.
