- 2tablespoons vegetable oil, divided
- 1 small onion, peeled, minced
- 2 cloves garlic, peeled, minced
- 1tablespoons ginger, peeled, minced
- 1/2 small red capsicum, seeds and veins removed, diced small
- 1 medium mango, peeled, diced small
- 50milliliter apple cider vinegar
- 1teaspoons sambal
- 680grams ahi tuna, cut into 4 portions
- 2tablespoons coriander, leaves chopped
Description
Lean ahi tuna steaks are perfectly light and healthy pan seared and topped with stewed mangoes and ginger.
Method
Step 1 of 4
Set a pot to medium heat on the stovetop adding in 1 tsp of oil to warm for 1 minute. Stir in the onions to sweat for 3 minutes before mixing in the garlic and ginger for 30 seconds.
Step 2 of 4
Add the red capsicum, mango, apple cider vinegar and sambal to the pot, reduce the heat and simmer for 30 minutes until fruit and vegetables have softened and the sauce has reduced. Set aside to cool while the fish is being cooked.
Step 3 of 4
Set a large non-stick pan to medium-high heat with the remaining oil until the the oil starts to smoke for 1 minute. Pan the fish dry with paper towel before seasoning the tuna with salt and pepper. Add the tuna to the pan searing on each side for 2 minutes to produce a medium-rare cooked tuna steak.
Step 4 of 4
Let the tuna rest for a few minutes before slicing and serving with stewed mangos and chopped cilantro.
