  • 8 large figs, cut in half
  • 3tablespoons honey
  • 2tablespoons butter, melted
  • 1/4 spring rosemary, chopped
  • 100grams mascarpone cheese
  • 50grams feta cheese
  • 2tablespoons icing sugar
  • 1teaspoons cinnamon
  • 6 shortbread cookies, crumbled

Description

Fresh figs roasted with honey butter and rosemary blends sweet and savoury flavours perfectly with a feta mascarpone topping.

Method

Step 1 of 3

Preheat the oven to 200°C. Line a baking sheet with parchment paper adding the figs skin side down to the tray. Mix the honey, melted butter and rosemary together drizzling the mixture over the figs using a spoon. Bake in the oven for 15 minutes.

Step 2 of 3

Place the mascarpone, feta cheese, icing sugar and cinnamon together in the bowl of a mini food processor, pulse until smooth and combined. Alternatively a hand blender can also be used.

Step 3 of 3

Divide the whipped mascarpone and feta cheese between 4 bowls, topping each bowl with 4 roasted figs, shortbread crumble drizzling on any leftover honey butter from the roasting tray. Serve warm.
