- 1kilograms small eggplants
- 1kilograms granulated sugar
- 3/4 cup water
- 1 lemon, juiced
- 5-6 cloves garlic
- 1/4teaspoons mixed spice
- 2 small pieces gum arabic
- 1 pinch salt
Method
Step 1 of 3
Prick the eggplants all over with a fork. Place them in a large bowl of salted water and leave to soak overnight.
Step 2 of 3
Rinse the eggplants in plenty of running water, then drop into boiling water and cook for 10 minutes. Drain and set aside.
Step 3 of 3
Put the sugar into a large saucepan with the water and allow to dissolve slowly. Pour in the lemon juice, then add the spices, gum arabic and the drained eggplants. Once the eggplants have absorbed the sugar, turn off the heat and drain.
