For the chutney
  • 1 bunch coriander, fresh, chopped
  • 1/2 bunch mint, leaves picked, chopped
  • 2 medium green chillies
  • 1/2 medium lime, juiced
  • 1teaspoons caster sugar
  • 200grams potatoes, peeled and sliced into cubes
  • 100grams chickpeas, tinned, drained
  • 1/2teaspoons chaat masala
  • 1 medium red onion, diced
  • 1/2teaspoons cumin
  • 20 paapdi

Description

Ready made paapdis are delicious piled high with potato and chickpea mix and homemade mint chutney.
Instruction tip
Add some Bombay mix on top for crunch.

Method

Step 1 of 3

Place all of the chutney ingredients in a blender with 2-3 tablespoons of water and blitz until smooth and runny.

Step 2 of 3

Place the potatoes in a large pan of boiling water and cook for 10 minutes and drain well. Toss the potato in a bowl with the chickpeas, chaat masala, red onion and cumin and toss well.

Step 3 of 3

Pile the mix on to the paapdi, drizzle over mint chutney and serve.
