- 500grams P, chopped
- 2tablespoons ghee (or non-flavoured oil of your choice)
- 2 cloves garlic, finely chopped
- 1/2teaspoons black mustard seeds
- 1/2teaspoons yellow mustard seeds
- 1 handful curry leaves
- 1teaspoons cumin seeds
- 1teaspoons curry powder
- 1/2-1teaspoons red chilli powder (optional)
- splash water
- 1tablespoons tomato puree
- 1/2 lemon (small)
- 1 handful coriander leaves, chopped (optional)
Description
Indian inspired spiced potatoes.
Method
Step 1 of 5
Cut potatoes into chunks and boil in water until cooked through. Drain the potatoes and set aside.
Step 2 of 5
Heat up some ghee or oil in a pan, then add the garlic, black and yellow mustard seeds, cumin seeds, curry powder, red chilli powder (optional) and curry leaves. Toss until fragrant. Be careful not to burn the spices. Add a splash of water if the spices become too dry.
Step 3 of 5
Add tomato puree and a splash of water to loosen the sauce if required.
Step 4 of 5
Add the potatoes to the pan, stir the sauce to coat the potatoes and warm through.
Step 5 of 5
Transfer to a bowl or plate. Squeeze some lemon juice over the top and garnish with coriander if desired.
