  • tomato chutney (to serve)
  • 3 small zucchini
  • 1 1/2teaspoons smoked paprika
  • 1 1/2teaspoons maple syrup
  • rocket leaves (to serve)
  • 3teaspoons soy sauce
  • brioche buns (to serve)
  • 1 1/2tablespoons olive oil
  • eggs, fried (to serve)

Method

Step 1 of 4

Preheat oven to 180°C. Line 2 baking trays with baking paper.

Combine oil, soy sauce, maple syrup and paprika in a small bowl. Season with pepper.

Step 3 of 4

Using a vegetable peeler or mandolin set on the thinnest setting, slice zucchini into long, thin strips. Place zucchini strips on prepared trays in a single layer, being careful not to overlap any. Brush each slice of zucchini with sauce mixture, then turn slices over and brush other sides.

Step 4 of 4

Cook zucchini for 15 minutes, then remove from the oven and turn slices over. Return to the oven and bake for a further 8-10 minutes or until golden. Serve in toasted brioche buns topped with a fried egg, rocket leaves and tomato chutney.
