- 125grams butter, melted
- 2tablespoons mint, chopped
- 1 pinch pepper (for seasoning)
- 16 sheets filo pastry
- 200grams feta
- 1 egg, whisked
- 2tablespoons dill, chopped
- 3tablespoons pine nuts, toasted
- 1 pinch sea salt ground (to taste)

Method
Step 1 of 4
Preheat oven to 200°C. Line 2 baking trays with bake paper. Crumble the feta into a bowl and add egg and herbs. Mash together with a fork. Stir in pine nuts and season with pepper.

Filo pastry dries quickly if left uncovered, so work with two sheets at a time. Remove sheets from the packet and reseal the remainder. Cover with a damp cloth. Lay 1 sheet on the bench and brush with butter. Top with a second sheet and brush with butter. Cut lengthways into 3 strips.
Step 3 of 4
Put a tsp of filling in one corner of each pastry strip. Fold over on an angle to make a triangle then continue to fold until you get to the end. Press end to seal and transfer to the baking tray. Repeat with remaining pastry and filling.
Step 4 of 4
Brush top of each triangle with butter and bake for 15 minutes or until golden. Serve hot as a snack or as an entree.
