  • 1 cup polenta
  • 2 cups milk
  • 2 cups water
  • 120grams parmesan cheese
  • 80grams cheddar cheese
  • 2tablespoons butter
  • 2tablespoons rosemary
  • 1 pinch salt
  • 1 pinch pepper
  • 1 chicken stock cube

Description

The most divine crunchy on the outside, soft in the centre chips all the family will love.

Method

Step 1 of 7

Grate the cheeses and set aside.

Step 2 of 7

Chop the rosemary finely and set aside.

Step 3 of 7

Add the milk, water and chicken stock cube to a saucepan and add to heat until liquid is hot. Add the polenta and stir on low heat for around 4 minutes until starts to thicken.

Quickly add the cheeses, butter and rosemary and mix vigorously until smooth. It will thicken very quickly so ensure you have a tray lined with baking paper ready.

Spread evenly into a baking tray. Note it will set by the time you have shaped evenly into a rectangle so move quickly. Refrigerate until ready to use.

Cut into thick or thin chips according to your preference. Thick often looks better and shows the rosemary flecks.

Preheat oven to 200 degrees and arrange to chips in a single layer on an oiled tray. Drizzle with oil and salt. Bake for around 30 minutes until golden, turning once at the halfway mark. Enjoy these delightful chips hot! Note - I have tried these in the oven and the air-fryer and prefer them in the oven because they bake more evenly.
