- 2 sheets frozen puff pastry (thawed)
- 2 long sweet potatoes
- 5milliliter extra virgin olive oil spray
- 10 pimento stuffed green olives (thinly sliced)
- 1 free range eggs (lightly beaten)

Method
Step 1 of 2
Preheat oven to 210°C. Line 2 baking trays with baking paper. Peel sweet potatoes and cut lengthways into 8mm-thick slices. Spray both sides of each slice with oil and season.
Step 2 of 2
Cut pastry into 3mm-thick strips. Wrap strips around sweet potato slices to resemble bandages. Brush with a little egg and place onto trays. Bake for 20-25 minutes or until pastry is golden and sweet potato is tender. Add olive slices to resemble eyes. Serve.
